Unsaved Granola

Ingredients

  • 16 oz Pecan Pieces
  • 16 oz Chopped Walnuts
  • 16 oz Pepitas
  • 4 oz Pistachios
  • 15 oz Seedless Raisins
  • 11 oz Dried Sweetened Cranberries
  • 3 oz Dried blueberries
  • 2 cups Unsweetened Coconut
  • 2 Eggs whites, or egg white substitute
  • 2 tbsp Ground Cinnamon
  • 3 tbsp Vanilla Extract

Instructions

  1. Preheat oven to 300ºF.
  2. Combine nuts and dried fruit in a large bowl. Stir to combine. Spoon batches of mixture into the bowl of a food processor and pulse until nuts are well chopped. Remove batches to a large bowl until all of the mixture has been processed.
  3. Add remaining ingredients to nut mixture, mix well then place on several lined baking sheets.
  4. Bake 30 minutes then rotate the pans.
  5. Bake an additional 20 minutes.
  6. After 20 minutes, remove from oven, then stir and break up granola, especially the center. Bake an additional 15 minutes.
  7. Remove from the oven and cool completely before storing.
  8. Chef's Note: This recipe makes 8 pounds of granola please adjust to make the quantity desired.
