Unsaved Garam Masala Fried Chicken

Ingredients

  • 2 tbsp Garam Masala
  • 2 tsp Turmeric powder
  • 1 tbsp Corriander, ground
  • 2 tsp Kashmiri chili powder
  • 1 cup(s) Yogurt, plain
  • 1 1/2 lb Chicken leg and thighs, separated into thighs and drumsticks
  • 1 qt AP Flour
  • 2 cup(s) grapeseed oil

Instructions

  1. Mix dried spices thoroughly in a small mixing bowl, using a fork or whisk to break down any lumps.
  2. Mix approximately 1/3 of spice mix with yogurt in a 2 gallon ziplock bag and add chicken pieces. Seal bag and massage marinade into chicken until spices and yogurt are fully mixed. Marinate up to 8 hours.
  3. Add remaining spice mix to AP flour in a large baking dish and incorporate thoroughly. Season with salt and pepper as needed. Remove from marinade and place chicken in seasoned flour. Coat completely with flour mix and store in flour until ready to fry.
  4. Heat oil in a large cast iron skillet. Place chicken in hot oil. Keep oil at medium heat (350ºF is optimal). Cook chicken for 5 minutes, turn to brown the other side for another 5 minutes.
  5. Check internal temperature of chicken and continue to turn pieces as needed to achieve desired internal temperature.
