Unsaved Fresh Tropical Shrimp Tostada

Ingredients

  • 1 tbsp avocado oil
  • 1 1/2 lb jumbo shrimp, raw, peeled and deveined
  • 1 tbsp Mi Tienda Pineapple Pepper Seasoning, or all-purpose seasoning of your choice
  • 1 cup(s) Indio mango, or other types of mango
  • 1 cup(s) hot house cucumber, peeled and diced
  • 1 medium yellow dragon fruit, diced
  • 1/4 cup(s) green onions, green parts only, very finely chopped
  • 1 medium avocado, peeled and diced
  • 1 medium serrano, seeded and finely chopped
  • 1/4 cup(s) fresh cilantro, leaves only, finely chopped
  • 8 each Mi Tienda Tostada Shells

Instructions

  1. Heat a large skillet over medium-high heat. Add oil, shrimp and seasoning. Cook and stir for 3 to 4 minutes or until shrimp turn whitish-pink and are just cooked through.
  2. Remove from pan and spread in a single layer on a plate. Cover and chill while preparing the rest of the tostada. Pre-heat oven to 350ºF.
  3. Peel and dice mango, dragon fruit and cucumber. Place in a bowl. Add green onion, avocado, serrano and cilantro. Toss with lime juice and more seasoning, if desired. Add cooked and chilled shrimp and toss to combine.
  4. Right before serving, place tostada shells in heated oven for 2 to 3 minutes, just long enough to heat through. Mound shrimp mixture on top of toasted tostada shells and enjoy immediately.
