
Fresh Tropical Shrimp Tostada

Ingredients
Serves 4
- 1 tbsp avocado oil
- 1 1/2 lb jumbo shrimp, raw, peeled and deveined
- 1 tbsp Mi Tienda Pineapple Pepper Seasoning, or all-purpose seasoning of your choice
- 1 cup(s) Indio mango, or other types of mango
- 1 cup(s) hot house cucumber, peeled and diced
- 1 medium yellow dragon fruit, diced
- 1/4 cup(s) green onions, green parts only, very finely chopped
- 1 medium avocado, peeled and diced
- 1 medium serrano, seeded and finely chopped
- 1/4 cup(s) fresh cilantro, leaves only, finely chopped
- 8 each Mi Tienda Tostada Shells
Instructions
- Heat a large skillet over medium-high heat. Add oil, shrimp and seasoning. Cook and stir for 3 to 4 minutes or until shrimp turn whitish-pink and are just cooked through.
- Remove from pan and spread in a single layer on a plate. Cover and chill while preparing the rest of the tostada. Pre-heat oven to 350ºF.
- Peel and dice mango, dragon fruit and cucumber. Place in a bowl. Add green onion, avocado, serrano and cilantro. Toss with lime juice and more seasoning, if desired. Add cooked and chilled shrimp and toss to combine.
- Right before serving, place tostada shells in heated oven for 2 to 3 minutes, just long enough to heat through. Mound shrimp mixture on top of toasted tostada shells and enjoy immediately.
