Ingredients

  • 2 cup(s) all purpose flour
  • 8 oz salted butter, set at room temp, plus 1 to 2 tbsp to grease baking dish
  • 1/2 cup(s) cream cheese, approximately 4 oz. set at room temp
  • 1 1/2 cup(s) granulated sugar, divided use
  • 1/2 cup(s) heavy whipping cream
  • 1 tbsp vanilla extract
  • 1 tsp fine sea salt
  • 1 tbsp baking powder
  • 2 lb fresh strawberries, tops trimmed, strawberries left whole
  • 3 tbsp cornstarch
  • 2 tbsp lime juice, plus 1 tbsp lime zest. approximately 2 limes

Instructions

  1. Preheat oven to 400ºF. Butter a 8x12 casserole dish and set aside.
  2. In a stand mixer with paddle attachment add flour, butter, cream cheese, 3/4 cup sugar, heavy cream, vanilla extract, salt and baking powder together.
  3. Turn mixer on medium speed and mix until batter is smooth, approximately 3 to 4 minutes. Scrape down sides of bowl as needed. Set batter aside to rest while mixing berries.
  4. In a large bowl combine strawberries, remaining sugar, cornstarch, and lime zest and juice. Mix well to evenly coat strawberries.
  5. Pour strawberry mixture into buttered casserole dish then scoop batter evenly over strawberries to cover.
  6. Bake 40 to 50 minutes or until dough is nicely golden brown and not runny in center and strawberry mixture is bubbly and set.
  7. Cool for at least 30 minutes before cutting and serving. Serve with vanilla ice cream or whipped cream if desired.
