
Fresh Strawberry and Spinach Salad

Ingredients
- 1/3 cup Pine nuts
- 6 oz Baby spinach
- 1/4 Small red onion, or about 1/4 cup, very thinly sliced
- 1/3 cup Balsamic vinaigrette
- 6 oz Fresh strawberries, washed and sliced
- 2 oz Goat cheese
Instructions
- Heat a small skillet over medium heat. Add pine nuts to hot, dry skillet. Toast for 3 to 4 minutes or to a golden brown. Remove from skillet and set aside.
- Add baby spinach to a large bowl. Add onions and vinaigrette and toss to lightly coat leaves.
- Scatter strawberries, goat cheese and toasted pine nuts over dressed spinach. Top with freshly ground pepper if desired. Toss lightly and serve immediately.
