
Fresh Strawberries and Cream Cupcakes

Ingredients
Serves 8
- 1 each strawberry cake mix
- 2/3 cup(s) Oil, any neutral, unflavored oil
- 2 large eggs
- 1/4 cup(s) water
- 1/4 cup(s) four berry jelly or fruit spread
- 10 medium fresh strawberries, chopped
- 2 oz whipped dairy topping, or whipped cream
- 1 oz mini M&Ms
Instructions
- Preheat oven to 350ºF. Spray muffin cups with non-stick spray and set aside briefly.
- Empty dry cake mix into a large mixing bowl. Add oil, eggs and water per instructions on the box (see Chef's note below). Divide batter evenly between muffin cups then bake according to box directions.
- Remove from oven and allow to cool. Once cool, remove cupcakes from muffin cups.
- Melt jelly in the microwave then stir through chopped berries. Top cupcakes as desired with strawberry mixture, whipped cream and candies.
- Chef's note: for a richer cake, substitute melted butter for oil and whole milk for water.
