Ingredients

  • 2 cup(s) Hood River cherries, Or any fresh cherries in season, pitted and diced
  • 1 cup(s) feta cheese, crumbled
  • 1/3 cup(s) shallot, minced fine
  • 1/3 cup(s) fresh cilantro, chopped fine
  • 1/4 cup(s) fresh jalapeno, stem and seeds removed and minced fine
  • 2 tbsp fresh mint, finely chopped
  • 1/2 cup(s) extra virgin olive oil
  • 1/4 cup(s) fresh lime juice

Instructions

  1. In a bowl, combine cherries, feta cheese, shallot, cilantro, jalapeno, mint, olive oil, and lime juice. Season with salt and pepper to taste.
  2. Toss well to combine, cover, and refrigerate for at least 30 minutes to allow flavors to meld.
  3. Serve over grilled chicken or grilled fish.
