
Fresh Cherry Compote

Ingredients
Serves 6
- 2 cup(s) Hood River Cherries, or any fresh red cherry, pitted and roughly chopped
- 1/4 cup(s) granulated sugar, or as needed depending on sweetness of fresh cherries
- 1 tbsp fresh lime juice, plus zest of 1/2 lime approximately 1/2 tsp
- 2 tsp vanilla extract
- 1/4 tsp sea salt
Instructions
- In a bowl, combine cherries, sugar, lime juice, lime zest, vanilla, and salt. Toss together to coat.
- Cover and refrigerate for at least 45 minute to 1 hour to allow flavors to meld.
- Serve sauce over ice cream, cakes or over biscuits for a fresh cherry shortcake. Sauce can be kept for up to 5 days in refrigeration.
