Unsaved Fresh Blackberry Tres Leches Cake

Ingredients

  • 15.2 oz Vanilla flavored cake mix
  • 1 cup Water
  • 3 Large eggs
  • 1/2 cup Vegetable oil, or any neutral oil
  • 12 oz Sweet Karoline Blackberries, washed and dried, or regular blackberries if these are out of season
  • 2 tbsp Granulated sugar
  • 1 cup Sweetened condensed milk
  • 1/2 cup Whole milk
  • 1/2 cup Heavy whipping cream, plus more as needed for whipping for topping

Instructions

  1. Preheat oven to 350ºF.
  2. In a large bowl combine cake mix with water, whole eggs, and oil. Follow instructions on the box. Bake and set cake aside to cool completely.
  3. In a separate bowl, combine 2 pints of blackberries with sugar and mash with a fork to combine and gently crush the blackberries.
  4. In a two cup measuring cup or bowl, combine sweetened condensed milk, milk and heavy cream. Whisk to combine.
  5. When cake has cooled, use a chop stick or wooden skewer to poke holes approximately 1 inch apart throughout the cake.
  6. Slowly and evenly pour milk mixture over cake to soak into all the holes. Let cake sit for 10 minutes then add crushed blackberries and all collected juices evenly on top.
  7. Cover and refrigerate for at least 30 minutes to 1 hour to allow cake to absorb all liquid.
  8. To serve, cut and top each piece with whipped cream, if desired, before serving.
