
Fish ala Chorrillana

Ingredients
- 2 Tilapia fillets
- 2 tsp Salt, divided use
- 1 tsp Black pepper
- 1/4 cup Avocado oil
- 1/4 cup All purpose flour
- 2 Medium garlic, minced
- 1/2 Medium yellow onion, julienned
- 2 Medium roma tomatoes, seeds removed, julienned
- 2 tbsp Aji Habanero Hot Sauce
- 1/4 cup Chicken broth
- 1 tbsp White wine vinegar
- 1/4 cup Cilantro, finely chopped
Instructions
- Heat a large skillet over medium-high heat. While pan is heating, pat fish fillets dry then season with 1 tsp. of salt and pepper.
- Add oil to hot pan. Dip fish in flour and shake off excess. Lay fish in hot oil and cook 2 minutes per side. Remove to a plate and cover to keep warm.
- Pour off all but 1 tbsp. of oil from pan and return to heat. Add garlic and onions and cook for 1 minute. Add tomatoes and hot sauce and cook for 1 more minute.
- Stir in chicken broth and vinegar and reduce by half. Sprinkle in cilantro and stir to combine. Spoon vegetable mixture over fish fillets and serve immediately.
