Enchilada Burrito

Unsaved Enchilada Burrito

Ingredients

  • 3 Ready to Cook Extra Large Tortillas
  • 3 cups Rotisserie Shredded Chicken, broken into bite size pieces
  • 10 oz Green Enchilada Sauce
  • 1/2 tsp All Purpose Seasoning
  • 2/3 cup Refried Pinto Beans, warmed
  • 3/4 cup Spanish Rice, heated per container instructions
  • 3/4 cup Queso Dip, heated per pkg. directions

Instructions

  1. Heat a large skillet over medium heat. Spray with non-stick spray and cook tortillas, one at a time, for 3 minutes per side. Remove and cover with a towel to keep warm.
  2. Return skillet to heat and add chicken and green enchilada sauce. Cook until sauce is bubbling and chicken is heated through. Add seasoning, stir to combine then remove from heat.
  3. To assemble burritos, spread 1/4 cup of refried beans down the center of each tortilla. Spoon equal amounts of Spanish rice on top.
  4. Top rice and beans with chicken and sauce mixture. To form burritos, roll edge of tortilla one turn over the filling, fold in sides then continue to roll up.
  5. Ladle desired amount of queso over burritos. Garnish with jalapeños, sour cream, or guacamole.
