
Easy Matzo Ball Soup

Ingredients
Serves 6
- 1 each rotisserie chicken, remove meat reserving the bones and the skin. Chop or shred the meat.
- 4 qt chicken broth, unsalted, divided use
- 5 oz matzo ball mix
- 3 each eggs
- 2 tbsp vegetable oil
- 1 fl oz olive oil
- 1/2 lb celery, small dice
- 2 cup(s) onions, white, small dice, divided use
- 1/2 lb carrots, peel and small dice
- 1 tbsp garlic, minced
- 1/4 each parsley bunch, chopped fine
Instructions
- Place chicken bones and skin in a large saucepan, add 3 quarts of broth and bring to a simmer. Simmer for 30 minutes.
- Place matzo ball mix in a medium mixing bowl and add eggs, vegetable oil and a pinch of salt. Mix until dough comes together then place in the refrigerator to rest, about 15 minutes.
- Heat a medium stock pot over high heat and add olive oil. When oil is hot, add celery, onions, carrots and garlic. Reduce heat to medium and sweat until soft and translucent, about 10 minutes.
- Strain fortified chicken broth into the pot with the vegetables. Bring to a simmer and cook for 15 minutes.
- Form matzo dough into 1.5 inch balls and place in soup. Bring to a simmer, cover and steam for 20 minutes.
- To serve, place 2 matzo balls in a bowl and ladle soup over them. Garnish with chopped parsley and serve.
