
De La Costa Chicken Sliders

Ingredients
Serves 6
- 1/3 cup(s) SMP Rub De La Costa wet seasoning
- 2 lb boneless skinless chicken thighs
- 1/4 cup(s) fresh squeezed lime juice
- 1 cup(s) white onions, finely diced
- 6 each slider buns, plus more as needed
- 1 cup(s) dill pickle chips, as needed for garnishing
Instructions
- In a bowl combine wet rub with chicken thighs and mix well to completely coat chicken. Cover with plastic wrap and allow to sit for alt least 30 minutes.
- While chicken is marinating, preheat grill to 350ºF or medium-high heat. Spray grill liberally with non-stick spray.
- Grill thighs for 5 to 7 minutes per side, then move to indirect heat and let thighs cook an additional 10 to 15 minutes or until chicken is fully cooked.
- Once cooked, remove chicken and allow to rest before thinly slicing. Add lime juice and onions to chicken mixture and set aside.
- To make sliders, add a little wet rub on the bottom half of each bun. Add some chicken and top with a pickle.
- Repeat process with each additional slider. Add cheese to sliders if desired.
