
Cuban Black Bean Soup

Ingredients
Serves 12
- 12 oz thick cut black pepper bacon, slice into 1/8" strips
- 1 each white onion, small dice
- 1 each bell pepper, small dice
- 1 each jalapeño, charred, stem removed and minced
- 1 1/2 tbsp cumin, ground
- 2 tsp Coriander, ground
- 1/2 each epazote, bunched, chopped
- 1/2 each culantro, bunch, chopped
- 4 cup(s) chicken broth, unsalted
- 45 oz black beans, canned, add beans and liquid
- 1 each lime, juiced
- 4 fl oz Mexican crema
- 1/4 each cilantro, bunched, chopped
Instructions
- Place cut bacon in a medium stockpot or Dutch oven over medium heat. Render bacon until crisp.
- Add onion and bell pepper to rendered bacon and liquid fat and sweat until translucent. Add charred jalapeño and stir to incorporate.
- Add cumin and Coriander and stir until fragrant. Add epazote, culantro, broth and beans. Bring to a simmer.
- Simmer for 20 minutes then blend with an immersion blender until smooth. Add lime juice and season with salt as needed. Garnish with creme and cilantro.
