Unsaved Crunchy Thai Basil Cucumber Salad

Ingredients

Serves 6

  • 2 large hot house cucumbers
  • 1 medium red bell pepper, cored and diced into 1/4 - 1/2 inch pieces
  • 1/3 cup(s) green onions, very finely chopped
  • 1/4 cup(s) fresh cilantro, leaves only, very finely chopped
  • 2 tbsp fresh Thai basil, leaves only, very finely chopped
  • 1/2 cup(s) Watcharee's Thai Basil and Garlic Sauce
  • 2 tbsp raw honey

Instructions

  1. Cut ends off cucumbers. Peel if desired. Using a sharp knife, cut into quarters long way and slice middle, seeded part out. Dice remaining part of cucumber into small cubes and place in large bowl.
  2. Add red bell pepper, green onions, cilantro and Thai basil. Toss gently to combine.
  3. Just before serving drizzle with sauce and honey and toss to combine.
