
Crunchy Thai Basil Cucumber Salad

Ingredients
Serves 6
- 2 large hot house cucumbers
- 1 medium red bell pepper, cored and diced into 1/4 - 1/2 inch pieces
- 1/3 cup(s) green onions, very finely chopped
- 1/4 cup(s) fresh cilantro, leaves only, very finely chopped
- 2 tbsp fresh Thai basil, leaves only, very finely chopped
- 1/2 cup(s) Watcharee's Thai Basil and Garlic Sauce
- 2 tbsp raw honey
Instructions
- Cut ends off cucumbers. Peel if desired. Using a sharp knife, cut into quarters long way and slice middle, seeded part out. Dice remaining part of cucumber into small cubes and place in large bowl.
- Add red bell pepper, green onions, cilantro and Thai basil. Toss gently to combine.
- Just before serving drizzle with sauce and honey and toss to combine.
