
Crunchy Green Bean & Wild Mushroom Bake

Ingredients
- 16 oz H-E-B Premiere Extra Fine Whole Green Beans, frozen
- 2 tbsp Olive oil
- 1/2 cup Shallot(s), sliced
- 10 oz Central Market Wild Mushrooms in Garlic, thawed
- 3 oz H-E-B Onion and Garlic Resturant Style Premium Croutons
- 1 cup Red bell pepper, chopped
Instructions
- Heat oven to 425°F and coat a 9 x 13-inch baking dish with non-stick cooking spray.
- Cook the green beans according to package directions, drain and set aside.
- Combine the olive oil, shallots in a microwave safe dish, cover with plastic wrap and microwave on high 1 minute and set aside. Place mushrooms in a microwave safe bowl, cover with plastic wrap and microwave on h for 4 minutes. Combine the cooked green beans, onion olive oil mixture and mushrooms in prepared baking dish and set aside. Season with salt.
- Place 3 ounces of croutons in a food processor and process for 10 seconds or until croutons are in coarse chunks.
- Evenly spread crushed croutons and chopped red pepper over the green bean mixture. Bake green bean casserole on the center oven rack for 15 minutes. Stir the casserole before serving
