Unsaved Crispy Pan Fried Chicken with Fresh Lemon

Ingredients

  • 1 cup(s) buttermilk, plus more as needed for dredging
  • 3 cup(s) panko breadcrumbs, or as needed for dredging
  • 1 1/8 lb extra thin sliced chicken breasts
  • 1 tbsp Mi Tienda All Purpose Seasoning, plus more as needed
  • 1/2 cup(s) Hill Country Fare Light Olive Oil, plus more as needed for frying
  • 1/3 cup(s) fresh squeezed lemon juice, as needed for drizzling over chicken
  • 1/3 cup(s) fresh cilantro, chopped fine, as needed for garnishing

Instructions

  1. Set up 2 shallow dishes, add buttermilk to one and panko breading to another.
  2. Coat chicken breast liberally on all sides with seasoning.
  3. Submerge each chicken breast in buttermilk then shake off excess. Dip and coat well in panko, pressing panko into chicken to make sure coating adheres.
  4. Arrange chicken on a rack and refrigerate for at least 30 minutes to allow coating to set.
  5. Place a large non-stick skillet over medium heat. Add oil and allow oil to just shimmer before adding chicken to pan.
  6. Cook each for 3 to 5 minutes per side or until golden brown. Flip and repeat with each additional chicken breast until internal temp reaches at least 165ºF. Remove chicken from pan to a rack to rest for 5 minutes.
  7. When chicken is rested, squeeze fresh lemon juice over each chicken breast and sprinkle chopped cilantro over the top. Season to taste and serve immediately.
