
Creamy Instant Pot Mashed Potatoes

Ingredients
- 1 cup Whole Milk
- 1 tsp True Texas BBQ Salt & Pepper Blend, plus more as needed to taste
- 3 Thyme, sprigs
- 4 oz Unsalted Butter, divided use, cut into pads or sliced thinly
- 2 lb Russet potatoes, peeled and cubed
- 1 cup Heavy whipping cream
- 2 tbsp Fresh chives, minced or diced small
Instructions
- Place milk, salt & pepper blend, thyme sprigs and half of butter into pressure cooker. Stir to combine.
- Add cubed potatoes top pot and stir to just combine. Place lid on locking securely.
- Set to manual setting for 18 minutes.
- Once timer has gone off, carefully vent pressure cooker according to manufacturer's directions and remove lid. Remove thyme stems and discard.
- Add remaining pads of butter and heavy cream and using a wire whisk gently whisk until potatoes are creamy and smooth.
- Season to taste with salt and pepper as needed and garnish with fresh chives.
