Cottage Cheese & Mushroom Toasts

Unsaved Cottage Cheese & Mushroom Toasts

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1/4 cup Shallots, minced or diced small
  • 2 tbsp Fresh thyme, leaves only, roughly chopped
  • 16 oz Sliced baby bella mushrooms
  • 6 slices Ancient grains or seeded bread, plus more as needed
  • 2 cloves Garlic, or as needed for spreading over bread
  • 2 cups Cottage cheese, plus more as needed
  • 1 tbsp Fresh lemon zest, or as needed for toasts
  • 1/2 cup Fresh micro greens, as needed
  • 1/3 cup Roasted salted pumpkin seeds, as needed to garnish

Instructions

  1. Set a sauté pan over medium-high heat. Once pan is hot, add oil along with shallots and thyme.
  2. Stir-fry mixture for 2 to 3 minutes or until shallots are just translucent. Add sliced mushrooms and a pinch of salt and pepper.
  3. Continue to cook until liquid in mushrooms has all but evaporated. Remove from heat, allow to cool and season to taste with salt and pepper.
  4. Toast bread in the oven or a toaster. Once toasted, gently rub a garlic clove over each slice to evenly impart flavor. Spread approximately 1/3 to 1/2 cup of cottage cheese over each slice of toast.
  5. Sprinkle lemon zest over cottage cheese then spoon an even amount of mushrooms over the top. Garnish each with micro greens and pumpkin seeds. Repeat process with each additional toast.
