
Cold Salmon Salad with Apples and Grains

Ingredients
- 8 oz H-E-B Responsibly Raised Fresh Atlantic Salmon Fillet
- 1/2 tsp H-E-B Kosher Salt
- 1/4 tsp H-E-B Pure Ground Black Pepper
- 1 Grapefruit, zested
- 1 Large fresh Fuji Apples, chopped
- 1 Central Market Quick Heat White & Red Quinoa, prepared according to pkg. directions
- 1 Pkg. H-E-B Sweet Kale Chopped Salad Kit
Instructions
- Preheat oven to 425°F.
- Line a sheet pan with foil or parchment.
- Place fillets on prepared pan and season with salt, pepper, and zest.
- Roast salmon 15 minutes, then remove from oven and transfer to a plate.
- Place salmon uncovered in fridge for 10 to 15 minutes to cool.
- To make salad, in a large bowl combine cooled salmon, chopped apple, grains and salad kit and mix well.
