Unsaved Cold Salmon Salad with Apples and Grains

Ingredients

  • 8 oz H-E-B Responsibly Raised Fresh Atlantic Salmon Fillet
  • 1/2 tsp H-E-B Kosher Salt
  • 1/4 tsp H-E-B Pure Ground Black Pepper
  • 1 Grapefruit, zested
  • 1 Large fresh Fuji Apples, chopped
  • 1 Central Market Quick Heat White & Red Quinoa, prepared according to pkg. directions
  • 1 Pkg. H-E-B Sweet Kale Chopped Salad Kit

Instructions

  1. Preheat oven to 425°F.
  2. Line a sheet pan with foil or parchment.
  3. Place fillets on prepared pan and season with salt, pepper, and zest.
  4. Roast salmon 15 minutes, then remove from oven and transfer to a plate.
  5. Place salmon uncovered in fridge for 10 to 15 minutes to cool.
  6. To make salad, in a large bowl combine cooled salmon, chopped apple, grains and salad kit and mix well.
