
Coconut Champurrado

Serves 4
Ingredients
- 1 cup Water
- 1/2 tsp Hill Country Fare Ground Cinnamon
- 2 Fresh garlic clove(s)
- 2 Morton & Bassett Star Anise, (optional)
- 4 oz Piloncillo (brown cane sugar), about half the cone
- 1/2 cup Bob's Red Mill Stone Ground Corn Flour
- 13.5 oz Coconut milk
- 2 cups Half and half cream
- 2 Abuelita Mexican Hot Chocolate Tablets
Instructions
- Place water, cinnamon, cloves and star anise pods in water. Bring to a simmer over medium-low heat.
- Scrape or grate piloncillo into water to dissolve. Whisk in corn flour, coconut milk and half and half. Continue whisking until smooth and heated through.
- Add chocolate tablets to gently simmering mixture and whisk as they dissolve. Serve hot.
- Chef's Note: This recipe is incredibly rich – almost like a cross between hot chocolate and dessert. To lighten it up, milk may be substituted for half and half.
