Ingredients

  • 3 cup(s) fresh Hood River Cherries, pitted and halved
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup(s) granulated sugar
  • 1/2 cup(s) all purpose flour
  • 3 large eggs
  • 1 cup(s) milk, can use plant milk interchangeably
  • 1/2 tsp almond extract
  • 1 1/2 tsp vanilla extract
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven to 350ºF. Spray an 8 inch round or square pan with nonstick spray. Arrange fruit evenly in bottom of pan. Sift together all dry ingredients.
  2. Place eggs, milk, extracts, and melted butter in a blender and run on low speed until well mixed.
  3. Add dry mixture and run on high speed for 10 seconds. Pour over fruit in pan.
  4. Place on middle rack of oven and bake 45-50 minutes or until a toothpick inserted in the middle comes out clean.
  5. Can also be made with canned, frozen, or fresh fruit including peaches, apples, and strawberries.
