
Chorizo Spiced Chicken and Papas Rajas

Serves 4
Ingredients
- 1 1/2 lb Thin sliced chicken breasts, cut into bite sized pieces or chunks
- 2 tbsp Chorizo paste
- 2 tbsp Fresh lime, juiced
- 1/4 cup Extra virgin olive oil, plus more as needed for sauteeing
- 26 oz HEB Side Solutions- Papas con rajas
- 1/3 cup Chicken broth
- 1/4 cup Fresh cilantro, roughly chopped, as needed for garnish
Instructions
- In a bowl combine chicken, chorizo paste and lime juice.
- Mix well to combine then set aside to marinate for at least 30 minutes. Cover and refrigerate if marinating longer.
- Place a large sauté pan over medium heat, add oil and allow to get hot. Add marinated chicken and stir-fry for 5 to 6 minutes or until just cooked. Remove chicken to a bowl using a slotted spoon, leaving any collected pan juices.
- Using the same pan, add potatoes, peppers, onions and seasoning packet. Add more oil to pan if needed. Stir-fry for at least 15 minutes then add broth and chicken.
- Cook for an additional 5 to 10 minutes or until chicken and potatoes are fully cooked.
- Remove from heat, season to taste and drizzle dish with sour cream packet and cilantro for serving. Season to taste with salt and pepper.
- Remove from heat, season to taste and drizzle sour cream over the top. If desired, sprinkle with cilantro before serving.
- Chef's Note: If potatoes are still a little firm after cooking, turn off heat and cover pan for 10 minutes to allow potatoes to fully soften.
