Unsaved ChoriQueso Fundido

Ingredients

  • 2 Poblano peppers, roasted, and skin and seeds removed, sliced
  • 1 tbsp Vegetable oil
  • 1 White onion, sliced
  • 3 tbsp Verde Chorizo Paste
  • 10 oz Queso quesadilla cheese, shredded
  • 8 oz Queso Oaxaca shredded cheese

Instructions

  1. Preheat oven to 350°F. Heat a medium-size cast iron pan over medium-high heat.
  2. Add oil and onions. Sauté until translucent, about 3 to 4 minutes. Add roasted poblanos and verde chorizo paste, and mix to combine.
  3. Remove from heat and sprinkle cheeses over the top. Place pan in oven to bake.
  4. Bake 7 to 8 minutes or until cheese has fully melted. Serve hot with chips or tortillas.
