
Chocolate Covered Peanut Butter Crispy Treats

Ingredients
- 3 tbsp Chunky peanut butter
- 3 tbsp Salted Butter, divided use
- 1 tsp Vanilla Extract
- 1 lb Marshmallows
- 9 cups Crispy rice cereal
- 1 lb Chocolate Candy Coating
Instructions
- Add peanut butter, 1 tablespoon of butter, salt and vanilla to a large microwaveable bowl (Pyrex, glass or ceramic works best for this). Microwave for 1 minute, or until butter and peanut butter are mostly melted.
- Add marshmallows and microwave 1 minute. Stir well. Microwave 1 more minute and stir until marshmallows are completely melted and mixture is smooth. Add cereal and stir well to coat.
- Rub remaining butter onto a 9" X 13" pan and pour marshmallow mixture into prepared pan. Using the back of a metal spatula, press down evenly into pan to compress. Chill for 10 to 15 minutes in refrigerator.
- Meanwhile, microwave candy coating according to package directions. Cut treats into desired shapes and dip each in chocolate coating. Chill again briefly to harden before serving.
