Unsaved Chocolate Chip Muffins made with Gluten Free Baking Mix

Ingredients

  • 22 oz Gluten Free Yellow Cake Mix
  • 2/3 cup(s) Almond Milk
  • 1/2 cup(s) Coconut Oil
  • 3 each Large Eggs
  • 2 tsp Vanilla Extract
  • 1 cup(s) Bitter-Sweet Chocolate Mini Baking Chips

Instructions

  1. Preheat oven to 350˚F.
  2. Line a standard muffin tin with baking cups.
  3. Combine cake mix, almond milk, oil, eggs and vanilla in a bowl with an electric mixer according to package directions. Then add in the chocolate chips.
  4. Fill cups 3/4 of the way with batter, then bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Let cool 5 minutes before eating. Extra muffins can be stored in a resealable container.
