
Chicken Taco Salad with Tostada Croutons

- 16 oz Texas-style refried charro beans
- 4 each yellow corn tostadas
- 1 cup(s) Mexican-style shredded cheese blend
- 12 oz fully cooked frozen seasoned chicken breast fajitas, cooked according to package directions
- 10 oz fresh chopped hearts of Romaine lettuce
- 1/3 cup(s) taqueria-style jalapeños
- 1/4 cup(s) Fresh Ranch Dressing
- 2 tbsp Mi Tienda Salsa Taquera – Medium
Instructions
- Preheat oven to 350°F. Empty beans into a small saucepan and place over medium heat until hot.
- Arrange tostada shells on a baking sheet. Spread 4 oz of beans on each tostada and sprinkle cheese evenly over the top.
- Bake in preheated oven for 5 to 7 minutes or until cheese is melted and slightly browned.
- Meanwhile, in a large bowl combine chicken, Romaine, and jalapeños. In a small bowl mix ranch dressing and salsa. Pour over salad and toss to combine.
- Remove tostadas from oven and cut each in 6 wedges. Divide salad into 4 bowls and serve tostada wedges over the top.
