
Chicken Piccata Burgers

Ingredients
- 4 oz Lowfat cottage cheese
- 1/4 cup Italian blend shredded cheese
- 3 cloves Fresh garlic, (or about 1 tablespoon of minced)
- 1/2 tsp Kosher salt
- 1 tsp Fresh lemon zest
- 1 tbsp Capers, drained, divided use
- 1 lb Ground chicken breast
- 1/3 cup Fresh parsley, finely chopped
Instructions
- Combine cottage cheese, Italian cheese, garlic, salt, lemon zest and half of capers to the bowl of a food processor. Pulse until smooth.
- Add ground chicken to a large bowl. Pour cheese mixture into bowl along with remaining capers and parsley. Toss to combine thoroughly. Form into patties.
- Heat a large skillet over medium-high heat and add just enough olive oil to lightly coat pan. Cook burgers for 4 to 5 minutes per side or to an internal temperature of 165ºF.
- Serve on toasted ciabatta or hamburger buns with desired condiments or toppings.
