
Chicken Fajita Taco

Ingredients
- 2 lb Chicken fajita thighs
- 1 White onion, thin sliced
- 1 Red bell pepper, sliced thin
- 12 oz Blanco queso
- 2 tbsp Cilantro, chopped
- 4 Butter tortillas
Instructions
- Heat grill to medium-high.
- While grill is heating up chop bell pepper and onion into thin slices.
- Heat a non-stick pan to medium-high. Add onions and bell peppers, cook 4 minutes, stirring every minute.
- When grill is ready, add chicken and cook until internal temperature is 165ºF.
- Cook for 4 minutes stirring every minute.
- Remove onions and bell peppers from non-stick pan and set aside.
- Slice chicken and start building taco starting with queso.
- Top with your favorite guacamole, salsa, and any other favorites.
- Warm tortillas one at a time in skillet and heat for 1 minute on each side.
