Unsaved Chicken and Shrimp Pad Thai

Ingredients

  • 2 tbsp tamari sauce
  • 2 tbsp fish sauce
  • 1 tbsp water
  • 1 tbsp brown sugar
  • 2 tbsp rice wine vinegar
  • 1 1/2 tbsp sambal oelek
  • 3 tbsp canola oil
  • 1 tbsp Peeled Garlic Cloves, minced
  • 1 1/2 lb raw jumbo shrimp, peeled
  • 1/3 cup(s) yellow squash, julienned
  • 1/3 cup(s) zucchini squash, julienned
  • 1/3 cup(s) calabaza squash, julienned
  • 1/2 lb linguine rice noodles, soaked in room temperature water for 1 hour and drained
  • 9 oz hearts of romaine
  • 4 oz bean sprouts
  • 3 oz Dry Roasted and Lightly Salted Peanuts, place in a ziplock baggie, seal and crush with a rolling pin
  • 2 each lime, cut into wedges
  • 1/5 each bunches cilantro

Instructions

  1. Place tamari sauce, fish sauce, water, brown sugar, rice wine vinegar and Sambal Oelek in a small bowl and whisk until incorporated. Set aside.
  2. Set a large wok or Dutch oven over high heat, add oil and heat 30 seconds. Add garlic and ginger, stir vigorously and cook until fragrant, about 20 seconds. Add shrimp and chicken, cook 1 minute, add vegetables and cook 1 more minute, stirring constantly.
  3. Add chili sauce mixture from step 1 and noodles then cook for another 2 minutes, stirring until noodles are well coated.
  4. Place a thin layer of romaine lettuce on a plate and top with Pad Thai. Garnish with bean sprouts, chopped peanuts, 2 lime wedges and a few sprigs of cilantro.
