Unsaved Cheesy Chili Cheeseburger Soup

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Ground chuck
  • 1 cup Red onion, finely chopped
  • 1 tbsp Fresh garlic, finely minced
  • 4 oz Chopped green chilies
  • 33 oz Texas Two-Step Chili Mix
  • 8 oz Sour cream, regular or low fat
  • 16 oz Easy Melt Cheese, cut into cubes
  • 1/3 cup Fresh cilantro, leaves only, finally chopped

Instructions

  1. Heat a large pot over medium-high heat. Add oil and ground beef, stirring and breaking apart chunks. Cook about 2 to 3 minutes.
  2. Add onion, garlic and green chilies. Stir to combine and cook another 4 to 5 minutes or until onions start to soften.
  3. Stir in chili mix, sour cream and easy melt cheese. Lower heat to medium and add cilantro. Stir and cook until cheese fully melts and soup is heated through.
  4. Serve topped with chopped green onions & avocado if desired.
