
Cheesy Chili Cheeseburger Soup

Serves 6
Ingredients
- 1 tbsp Olive oil
- 1 lb Ground chuck
- 1 cup Red onion, finely chopped
- 1 tbsp Fresh garlic, finely minced
- 4 oz Chopped green chilies
- 33 oz Texas Two-Step Chili Mix
- 8 oz Sour cream, regular or low fat
- 16 oz Easy Melt Cheese, cut into cubes
- 1/3 cup Fresh cilantro, leaves only, finally chopped
Instructions
- Heat a large pot over medium-high heat. Add oil and ground beef, stirring and breaking apart chunks. Cook about 2 to 3 minutes.
- Add onion, garlic and green chilies. Stir to combine and cook another 4 to 5 minutes or until onions start to soften.
- Stir in chili mix, sour cream and easy melt cheese. Lower heat to medium and add cilantro. Stir and cook until cheese fully melts and soup is heated through.
- Serve topped with chopped green onions & avocado if desired.
