Ingredients
Serves 8
- 1/4 cup(s) cold water
- 1/4 oz unflavored gelatin, 1 envelope
- 16 oz cream cheese, softened at room temp
- 8 oz full fat sour cream
- 1 cup(s) Caster sugar, or regular granulated sugar
- 1 tbsp vanilla bean paste
- 1/2 tsp fine sea salt
- 1 cup(s) heavy whipping cream
- 12 oz graham cracker pie crusts, 2- 9 inch prepared graham crusts
Instructions
- In a small microwave safe bowl, combine water and gelatin. Stir to dissolve then set aside for at least 15 minutes to allow gelatin to set.
- In a stand mixer with whisk attachment, add cream cheese, sour cream, sugar, vanilla bean and salt.
- Whip mixture on medium-high speed until creamy and well blended, approximately 2 to 3 minutes. Scrape down sides of bowl as needed.
- Microwave gelatin for 15 to 18 seconds max so gelatin is just dissolves and is liquid again. Don't scald gelatin.
- Stir 1 tablespoon of heavy cream into gelatin to temper gelatin. With mixer running at low speed, slowly pour in remaining heavy cream and gelatin.
- Turn mixer to medium-high speed and mix for at least 2 to 3 minutes.
- Pour batter evenly between the 2 pie crusts.
- Cover pies and refrigerate for at least 8 hours to allow gelatin to fully set or overnight for best results. Cut and serve with fresh strawberries and whipped cream if desired.
