
Cheddar Bacon Mashed Potatoes

Ingredients
- 2 lb Yukon gold potatoes
- 1 cup 0
- 1 cup 0, shredded
- 8 slices Fully cooked bacon, chopped
- 4 Green onion, chopped
Instructions
- Spray a 2 quart microwave safe baking dish with nonstick cooking spray; set aside.
- Mash and peel potatoes.
- Cut potatoes into 1 1/2 inch cubes and place in a microwave safe bowl.
- Add 1 1/2 cups water and cover potatoes with plastic wrap.
- Microwave potatoes on high power for 12 minutes or until tender.
- Drain the potatoes and mash with a potato masher or electric mixer.
- Add dressing, shredded cheese, bacon and green onions to the mashed potatoes; stir to combine.
- Pour the mashed potatoes into the prepared baking dish and cover with plastic wrap. You can refrigerate the potatoes over night or heat in the microwave for 4 minutes before serving.
