
Cauliflower Mole Pipian Enchiladas

Ingredients
Serves 4
- 1 tbsp oil
- 2 1/2 oz white onion
- 1 large garlic clove, minced
- 8 oz cauliflower florets, rough chopped
- 1/2 tbsp For Real Sriracha-Cha Garlic Sweet Pepper Spice
- 7 1/5 oz Hernán Mole Pipián
- 10 each corn tortillas, warmed in microwave
- 8 oz Mi Tienda Tres Quesos Shredded Cheese
Instructions
- Heat a large skillet over medium-high heat. Add oil, onions, garlic, and cauliflower. Sauté for 3 minutes, stirring frequently, until vegetables begin to soften. Season with ginger garlic and remove from heat.
- Preheat oven to 375ºF. Spray a 9x13 pan with nonstick spray. Pour mole sauce into bottom of pan.
- Spoon 1/4 cup of cauliflower into each tortilla and roll up to close. Place seam-side down in pan. Repeat with remaining tortillas.
- Top tortillas with shredded cheese and cover with foil. Bake 20 minutes or until cheese is melted and sauce is bubbling around the edges.
- Rest for 5 minutes prior to serving and serve with salsa, sour cream, or pico de gallo.
