
Cauliflower Alfredo Made with Non-dairy Creamer

Serves 4
Ingredients
- 2 tbsp Extra virgin olive oil
- 1 cup Yellow onions, medium diced
- 3 Medium fresh garlic clove, minced
- 16 oz Cauliflower Rice
- 1 tbsp Nutritional yeast
- 1 1/2 tsp Kosher salt
- 1/4 tsp White pepper
- 1/2 cup Vegetable stock
- 1 1/2 cups Almond coconut creamer original
Instructions
- Heat a medium pot over medium heat. Add olive oil and when hot add onion and garlic and cook for 1 to 2 minutes to soften. Add in cauliflower rice and cook for 3 to 4 minutes, stirring occasionally to prevent browning.
- Add in nutritional yeast, salt, and pepper and stir to combine. Pour in vegetable stock and cook until reduced by a third, about 2 minutes.
- Reduce heat to low and slowly pour in creamer. Stir to combine then blend with an immersion blender or in a stand blender. Only fill halfway in a standard blender and blend in batches to prevent overflow. Adjust seasoning with salt and pepper if needed.
