Calabacita Lasagna

Ingredients

  • 1 Vegetable oil no-stick cooking spray
  • 2 Large zucchini squash, sliced thin
  • 14.5 oz Sweet white corn
  • 14.5 oz Diced tomatoes
  • 14.5 oz Diced green chilies
  • 27 oz Marinara pasta sauce
  • 8 oz Mexican style blend shredded cheese, shredded
  • 30 oz Ricotta cheese
  • 9 No boil lasagna noodles

Instructions

  1. Heat oven to 375°F.
  2. Spray a 9 x 13-inch microwave-safe baking dish with non-stick cooking spray and set aside.
  3. Combine zucchini, corn, diced tomatoes, diced green chilies and marinara sauce in a large bowl; set aside.
  4. Combine shredded cheese and ricotta cheese in a bowl and set aside.
  5. Spread 1 cup sauce mixture in prepared baking dish.
  6. Top sauce with 3 lasagna noodles, 2 cups vegetable sauce and 1 1/2 cups cheese mixture.
  7. Repeat one more layer and top with 3 more noodles, remaining cheese and sauce mixture.
  8. Bake the lasagna in the oven on the center rack for 40 to 60 minutes or until lasagna is bubbly in center and cheese is melted.
  9. Cool lasagna for 10 minutes before cutting and serving.
