Buttery Shrimp and Lemon Orzo

Unsaved Buttery Shrimp and Lemon Orzo

Ingredients

  • 3 tbsp Salted butter
  • 1/3 cup Shallot, very finely chopped
  • 1/2 cup Dry white wine
  • 8 oz Orzo
  • 1 lb Raw shrimp, thawed (if frozen) peeled, deveined
  • 2 tbsp Adams Reserve Buttery House Seasoning
  • 2 tbsp Olive oil
  • 2 Medium roma tomatoes, seeded and diced
  • 1/4 cup Fresh parsley, leaves only, chopped
  • 1 Medium lemon, zest only

Instructions

  1. Heat a sauce pan over medium heat. Add butter, shallots and wine to pan. Stir and cook for 3 to 4 minutes, or until shallot starts to soften and wine is mostly evaporated.
  2. Add orzo, 1 1/2 cups water and salt (to taste). Stir and bring orzo to a simmer. Stir and cook for 10 to 12 minutes, or until orzo is tender. Add more water as needed to cook orzo to a soupy, risotto texture. Remove from heat.
  3. While orzo is cooking, season shrimp with Buttery House seasoning (or all-purpose seasoning of choice). Heat a skillet over medium-high heat. Add olive oil and seasoned shrimp to pan. Cook for 2 to 3 minutes, or until shrimp curls up and turns pinkish/white. Remove from heat.
  4. Heat a skillet over medium-high heat. Add olive oil and seasoned shrimp to pan. Cook for 2 to 3 minutes, or until shrimp curls up and turns pinkish/white. Remove from heat.
  5. Add diced tomato, fresh parsley and lemon zest. Stir to combine. Adjust seasoning with more Buttery House or salt and pepper as needed. Divide orzo between serving bowls and spoon shrimp over orzo
