
Butternut Squash Carbonara

Serves 8
Ingredients
- 1 tbsp Olive oil, plus more as needed for drizzling over pasta
- 1 1/3 cups Bacon, diced small
- 1 1/2 tbsp Garlic, minced fine or zested
- 1 tbsp Red wine vinegar
- 24.3 oz Butternut squash pasta sauce
- 1/4 cup Heavy whipping cream
- 1 Large eggs, yolks only, whites discarded
- 8 oz Fresh English peas
- 16 oz Linguine pasta
- 1/2 cup Pecorino Romano cheese, as needed for garnish
Instructions
- Place a medium sized pot over medium heat and add oil, bacon and garlic. Stir-fry until bacon just starts to crisp.
- Add red wine vinegar and cook until liquid has evaporated.
- Add pasta sauce, heavy cream and egg yolk, stir to combine and lower heat. Add peas and stir intermittently to keep sauce from separating.
- While sauce cooks, bring a large pot of water to a boil with a generous pinch of salt. Cook pasta according to package instructions.
- Drain pasta and immediately add to sauce while still hot. Add Pecorino Romano and toss to coat.
- Serve immediately, season to taste and garnish with more Pecorino Romano and fresh basil if desired.
