
Buddhas Hand Citron Poultry Brine

Serves 12
Ingredients
- 4 qt Ice cold water, divided use
- 3/4 cup Kosher salt, if using iodized or table salt, use 1/2 cup
- 1/2 cup H-E-B Mexican Mesquite Honey
- 1 H-E-B Organics Thyme, approximately 1/3 ounce 6 to 8 sprigs
- 1 Buddhas hand citrus, outer skin only, no pith, peeled and 4 to 6 fingers cut off, remainder discarded
- 1 tbsp Whole black peppercorns
Instructions
- Combine 2 quarts of water in a saucepan along with salt, honey, thyme, buddha's hand and peppercorns.
- Bring to a simmer and cook just long enough for salt to completely dissolve.
- Remove from heat and cool to room temperature.
- Pour cooled brine into a big pot or container and add remaining cold water. Stir to combine.
- Refrigerate brine until ready to use.
- This brine will flavor up to 3 to 5 pounds of chicken, turkey or even pork.
- Chef's Note: For best results, brine poultry completely submerged for at least 8 hours. For pork, submerge for 6 to 8 hours.
