Unsaved Brisket Queso & Black Bean Costra Tacos

Ingredients

  • 9/10 lb Tex-mex brisket queso
  • 2 cup(s) Mi Tienda queso quesadilla, or oaxaca cheese, plus more as needed
  • 6 each bakery fresh butter tortillas, or your favorite tortillas, plus more as needed
  • 15 oz Mi Tienda refried black beans with jalapenos, heated according to package instructions and use as needed for building tacos
  • 1 cup(s) fresh cilantro, chopped as needed for garnishing
  • 1/2 cup(s) white onion, minced or diced small, plus more as needed

Instructions

  1. Preheat oven to 425°F. Add heavy cream and place brisket queso in oven follow package cooking instructions until cheese is bubbly and melted.
  2. Set brisket queso aside and keep warm, make tacos by preheating a griddle to 350°F.
  3. Place approximately 1/3 to 1/2 cup of shredded cheese onto the griddle in a small circle. As soon as the cheese starts to melt, lay and press a tortilla on top of each pile of cheese.
  4. Allow cheese to get crispy before flipping and allow tortilla to cook another 30 seconds or so and remove. Repeat this process with each additional taco.
  5. To build, spread a little brisket queso on top of crispy cheese followed by warm beans, cilantro and onions.
  6. Chef's Note: To add extra flavor and protein, add grilled flank steak rubbed with SMP Rojo Rub.
