Unsaved Breaded Pork Chops With Fresh Applesauce

Ingredients

  • 1 1/2 cups H-E-B Low Fat Cultured 1% Milkfat Buttermilk
  • 3 tsp H-E-B Fine Mediterranean Sea Salt
  • 4 H-E-B Natural Thick Bone-In Center Cut Pork Loin Chops
  • 2 lb Granny Smith apple(s), peeled, cored and chopped coarsely
  • 3 tbsp H-E-B Pure Cane Extra Fine Granulated Sugar
  • 1 tbsp H-E-B Organics Apple Cider Vinegar
  • 1 Morton & Bassett Bay Leaf
  • 1/4 tsp Morton & bassett ground allspice
  • 3 H-E-B Round Top White Bread slices
  • 1 tbsp Fresh garlic clove(s), minced
  • 1 tsp Morton & Basset Rosemary
  • 1 tsp Morton & bassett thyme
  • 2 tbsp H-E-B Sunflower Oil with Garlic & Herb Flavors
  • 2 tbsp Unsalted butter

Instructions

  1. Combine milk and 2 tablespoons salt in a 1-gallon sealable plastic bag, then add pork chops and marinate 1-2 hours.
  2. For applesauce, place apples in a 3-quart saucepan with sugar, vinegar, bay leaf and allspice; bring mixture to a boil over medium heat, and stir occasionally; reduce heat to medium-low, cover and cook 15-20 minutes, or until apples are falling apart and liquid is absorbed; remove from heat, discard bay leaf and mash apples; set aside.
  3. While applesauce cooks, pulse bread in blender or processor to make 3 1/2 cups crumbs; combine breadcrumbs with garlic, rosemary, thyme and remaining teaspoon salt in a shallow bowl; remove chops from milk and dredge in crumb mixture to coat both sides.
  4. Heat 2 tablespoons oil with 2 tablespoons butter in a heavy, large skillet over medium heat about 1 minute, or until bubbling; cook chops 4 1/2 minutes per side; serve pork chops with applesauce.
