Ingredients

- 8 oz salted butter, melted
- 1 cup(s) light brown sugar
- 3/4 cup(s) white sugar
- 1 tbsp corn starch
- 1 tsp fine sea salt
- 2 tbsp vanilla extract
- 3 large eggs, 2 whole eggs and 1 egg yolk
- 2 1/2 cup(s) all purpose flour
- 1 cup(s) butterscotch chips
- 1 cup(s) mini semi sweet chocolate chips
Instructions
- Preheat oven to 350°F.
- In a stand mixer or with a hand mixer, cream together melted butter, light brown sugar, white sugar, corn starch, fine sea salt, and vanilla extract for 3 to 4 minutes on medium speed or until creamy.
- Scrape down sides of the bowl as needed. While the mixer is running, add eggs and mix until smooth.
- Add all-purpose flour all at once and mix until the batter is smooth. Add butterscotch chips and mini semi-sweet chocolate chips and mix for 1 more minute on medium speed
- Pour batter evenly onto a sheet pan lined with parchment paper and smooth out until the batter reaches the edges of the pan.
- Bake 20 to 25 minutes or until a toothpick inserted into center pulls out clean.
- Allow to cool on a rack for at least 1 hour before de-panning and cutting into squares.
