
Blender Hollandaise Sauce

Ingredients
- 3 H-E-B Large Grade AA Eggs, yolks only
- 2 tbsp Lemon(s), juiced
- 1/8 tsp Salt
- 1/8 tsp Central Market Organics Ground Cayenne Pepper
- 1/2 cup Unsalted butter, melted
Instructions
- Combine egg yolks, lemon juice, salt and cayenne in blender, and cover.
- Quickly turn blender on and off.
- While blender's running, slowly pour a thin stream of hot butter into egg yolk mixture, blending until thick and fluffy for 30-60 seconds.
- Serve immediately or pour sauce into a bowl, and place in a warm water bath until ready to serve.
