
Blackened Shrimp Po'boy Sandwich

- 20 each raw 16/20 Shrimp, thawed, peeled and deveined
- 1 tbsp Cajun seasoning
- 4 each submarine rolls, split lengthwise but still connected
- 4 tbsp butter, softened
- 2 tbsp olive oil
- 8 tbsp Ashman Remoulade Sauce
- 3 cup(s) shredded lettuce
- 4 medium Roma tomatoes, Core and end removed, sliced into 1/4 inch thick slices
Instructions
- Sprinkle shrimp on both sides with Cajun seasoning and set aside. Spread inside of each roll with a tablespoon of butter.
- Heat a large skillet over medium-high heat. Place 2 rolls butter-side-down and toast until golden brown, 1 to 2 minutes. Repeat with remaining rolls.
- Add oil to the same skillet. When hot, add shrimp and cook 2 minutes per side or until shrimp are no longer opaque in the middle. Remove from heat.
- To assemble, spread a tablespoon of remoulade sauce on each side of toasted roll. Lay 5 shrimp on the bottom piece of bread.
- Top shrimp with 3/4 cup of shredded lettuce and 2 to 3 tomato slices. Fold to close and secure with toothpicks if desired. Slice in half and serve with chips or french fries.
