Unsaved Blackberry White Chocolate Drop Scones

Ingredients

  • 4 cup(s) All purpose flour
  • 1/2 cup(s) granulated sugar
  • 2 tsp sea salt
  • 1 tbsp baking powder
  • 8 oz unsalted butter, grated or cut into pea size pieces
  • 1/2 cup(s) full fat sour cream
  • 6 oz Karoline blackberries, or regular blackberries if these aren't available
  • 1 cup(s) white chocolate chips
  • 1 tbsp vanilla bean paste
  • 1 1/3 cup(s) heavy whipping cream, plus more as needed for brushing tops

Instructions

  1. Preheat oven to 425ºF. Line a sheet pan with parchment paper and set aside.
  2. In a stand mixer with paddle attachment, add flour, sugar, salt, baking powder, butter and sour cream.
  3. Mix on low speed until butter and sour cream are incorporated with no big lumps.
  4. Add blackberries, white chocolate chips and vanilla bean paste. Mix 1 minute just to combine and breakdown blackberries then add heavy cream.
  5. Mix for a few minutes or until flour is fully incorporated and dough comes together. Divide dough into equal servings.
  6. Working in batches as needed, scoop dough onto prepared sheet pan a couple of inches apart. Brush tops with a little heavy cream.
  7. Bake 20 to 25 minutes or until golden brown and scones are set in the middle. Allow to cool for at least 30 minutes to allow scones to set up.
