
Blackberry Cream Cheese Stuffed French Toast

Ingredients
Serves 6
- 1 cup(s) cream cheese, softened slightly at room temperature
- 1 cup(s) fresh blackberries, Plus more as needed for garnish. Sweet Karoline variety works best if in season.
- 1/3 cup(s) powdered sugar, plus more if needed for garnishing if desired
- 1 tbsp vanilla bean paste
- 1/2 tsp sea salt
- 16 oz bakery challah bread loaf, ends cut off and reserved for another use, use even center cuts
- 2 1/2 cup(s) vanilla coffee creamer
- 5 large eggs
- 1/4 cup(s) refined coconut oil, or any neutral flavored oil, plus more as needed for searing additional toasts
- 1/2 cup(s) maple syrup, or as needed
Instructions
- In a bowl add cream cheese, blackberries, powdered sugar, vanilla bean paste and salt. Mix well to combine then cover and refrigerate for 30 minutes.
- Preheat oven to 350ºF.
- To stuff French toast, cut challah bread into 6 even 1/2 inch slices. Gently press the center of 3 slices of challah to make a small well for cream cheese filling.
- Stuff each center of bread with approximately 2 to 3 tablespoons of cream cheese filling. Gently press another slice on top of filled slice to seal like a sandwich.
- In a shallow dish combine creamer with eggs and whisk to combine. Dip each sandwich in the custard for approximately 10 to 12 seconds to completely soak. Let sit for 5 minutes to allow custard to soak in.
- Place a large sauté pan over medium heat, add coconut oil and allow to get hot. Sauté French toast for 2 to 3 minutes per side or until just caramelized and browned on each side.
- Repeat process with each additional French toast. Once all toasts are seared place onto a sheet pan and bake for 8 to 10 minutes to just finish setting custard.
- Garnish French toast with maple syrup, more blackberries and whipped cream if desired.
