
Blackberry Chess Pie

Ingredients
Serves 8
- 1 1/2 cup(s) all purpose flour, divided use, 1-1/4 cups for crumb topping and 1/4 cup for filling
- 4 oz salted butter, 1 stick, melted
- 1 cup(s) granulated sugar, divided use, 1/2 cup for crumb topping and 1/2 cup for filling
- 2 large eggs
- 8 oz sour cream, full fat
- 2 tsp vanilla extract
- 1/2 tsp fine sea salt
- 12 oz Sweet Karoline Blackberries
- 8 oz frozen pie crust, 1 standard 8 to 9 inch pie crust thawed
Instructions
- Preheat oven to 350ºF. Line a sheet pan with parchment paper and set aside.
- In a bowl add 1-1/4 cups of flour, melted butter and 1/2 cup sugar. Mx well until dough has a semi-wet sand texture. Set aside.
- To make filling, place remaining flour in a bowl along with eggs, sour cream, 1/2 cup sugar, vanilla extract and salt. Whisk until smooth and creamy. Set aside briefly.
- Arrange blackberries evenly in pie crust. Pour cream mixture over the top and give pie a slight shake to even out the filling.
- Spread crumb topping over filling to completely cover.
- Place pie on prepared sheet pan and bake for 45 to 60 minutes or until pie is set in the middle and crust is golden brown.
- Cool for at least 2 hours to allow cream and pectin to fully set.
