Blackberry Chess Pie

Unsaved Blackberry Chess Pie

Ingredients

  • 1 1/2 cup(s) all purpose flour, divided use, 1-1/4 cups for crumb topping and 1/4 cup for filling
  • 4 oz salted butter, 1 stick, melted
  • 1 cup(s) granulated sugar, divided use, 1/2 cup for crumb topping and 1/2 cup for filling
  • 2 large eggs
  • 8 oz sour cream, full fat
  • 2 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 12 oz Sweet Karoline Blackberries
  • 8 oz frozen pie crust, 1 standard 8 to 9 inch pie crust thawed

Instructions

  1. Preheat oven to 350ºF. Line a sheet pan with parchment paper and set aside.
  2. In a bowl add 1-1/4 cups of flour, melted butter and 1/2 cup sugar. Mx well until dough has a semi-wet sand texture. Set aside.
  3. To make filling, place remaining flour in a bowl along with eggs, sour cream, 1/2 cup sugar, vanilla extract and salt. Whisk until smooth and creamy. Set aside briefly.
  4. Arrange blackberries evenly in pie crust. Pour cream mixture over the top and give pie a slight shake to even out the filling.
  5. Spread crumb topping over filling to completely cover.
  6. Place pie on prepared sheet pan and bake for 45 to 60 minutes or until pie is set in the middle and crust is golden brown.
  7. Cool for at least 2 hours to allow cream and pectin to fully set.
