
Black Garlic Vinaigrette

Ingredients
- 1/4 cup Sherry vinegar
- 1 1/2 tbsp Dijon mustard
- 1 1/2 tbsp Shallots, minced fine or chopped
- 1/4 cup Black garlic cloves
- 2 tbsp Cold water
- 1 cup Avocado oil, or any neutral flavored oil
Instructions
- In a blender add the vinegar, mustard, shallots, garlic cloves and water.
- Blend until smooth, then slowly add avocado oil in a steady stream until everything emulsifies and is creamy.
- Season vinaigrette with salt and pepper to taste. Refrigerate for up to 3 days.
- Chef's Note: Use as a salad dressing, veggie dip or use on grilled chicken or grilled veggies as a finishing sauce.
