
Beyond Meat Italian Sausage and Olive Pasta

- 1 tbsp Extra virgin olive oil
- 4 each Plant based hot Italian sausage
- 1 1/2 cup(s) Yellow onions, julienned
- 1/2 cup(s) Olive salad
- 16 oz Penne rigate, cooked, rinsed, and lightly oiled
- 2 tbsp Vegan parmesan
- 4 oz Mozzarella cheese, shredded
Instructions
- Place a large skillet over medium-high heat. Add oil to hot pan and swirl to coat.
- Add sausage links and cook 6 to 8 minutes, turning to brown each side. Remove to a cutting board and slice into bite size rounds.
- To same pan, add onions and cook 2 minutes until softened. Stir in olive salad and cook 30 seconds.
- Add cooked pasta and sliced sausage and toss until heated through. Fold in shredded cheese and remove from heat. Garnish with Parmesan cheese if desired.
