
Barbecue Chicken Quesadilla

Ingredients
- 1 Fully cooked fajita chicken breast
- 1 tbsp Oil
- 1 cup Pico de gallo
- 1/2 cup Pickle chips, roughly chopped
- 1 cup Better Than Good Traditional Texas BBQ Sauce
- 4 Burrito Grande Flour Tortillas
- 2 cups Mexican style shredded cheese
Instructions
- Heat a large skillet over medium-high heat. Add oil and chicken, and cook 7 minutes or until chicken is heated through and browned.
- Add pickles, pico de gallo, and bbq sauce and stir to combine. Turn heat down to low and cook for 3 minutes.
- Place a tortilla in a separate pan and sprinkle with half a cup of shredded cheese. Cook over medium heat until cheese begins to melt.
- Add 1/4th of the chicken mixture onto one side of the tortilla and fold the other side over to close. Press down gently and cook for 1 more minute or to desired crispness. Cut into wedges and serve.
